Abstract

It is an attempt to show how some of the essential characteristics of the Principle conceived as absolute instability and pure movement come together in the nature of wine (and prosecco in particular). Of a principle conceived as a synonym of unbreakable lightness. And therefore as a symbol of another metaphysical option, as opposed to the one that would dominate throughout the history of the West. The metaphysical option that Ernesto Grassi would
have brought back to the power of “fantasy”. In short, it is a question of rethinking the fantastic universal of Vico, of rethinking the Baroque, and of conceiving the cognitive or creative operation as a true subtraction of weight – according to the precious indication of Italo Calvino. It is a question of rethinking the relationship between wine and eros; in order to finally be able to leave behind the erroneous belief that in reality absolute polarities would really be recognizable. Able to allow himself to be led back to rigid and immovable
forms, and to make us believe that it would be precisely to them to arrive.
